Depends on #21
Most or all of our products use PHP 7.4+ so I think it's safe to update this to require PHP 7.4. This also allowed me to increase the PhpStan level from 5 to 6. So this includes all the changes to use PHP 7.4 syntax and the documentation needed to pass PhpStan level 6.
