Description

This PR ads support for AnyOf schema that was recently added to Prism itself.

Currently when using an MCP with a required AnyOf property, gemini-pro-3 fails, because it lists a required property that is not defined.

The tests were failing because we needed to update the minimum of Prism that contained the schema.
